Instructions

    Marinate chicken pieces in buttermilk with salt, pepper, and hot sauce for minimum 4 hours or overnight.

    Combine flour with paprika, cayenne, garlic powder, onion powder, salt, and black pepper in large bowl.

    Heat vegetable oil to 165°C in deep fryer or large heavy-bottomed pot.

    Remove chicken from buttermilk, allowing excess to drip off. Dredge thoroughly in seasoned flour.

    Carefully lower chicken pieces into hot oil. Don't overcrowd - fry in batches.

    Fry for 12-15 minutes, turning occasionally, until golden brown and internal temp reaches 75°C.

    Remove and drain on wire rack over paper towels. Season with salt immediately.

    Keep warm in low oven while frying remaining batches. Serve hot with coleslaw and pickles.
