Generously coat all sides with BBQ rub, pressing to adhere. Let sit at room temp 1 hour.

Preheat oven to 140°C or set up smoker to 110°C with hickory/applewood chips.

Place pork shoulder fat-side up in roasting pan. Add 500ml water to bottom of pan.

Cover tightly with foil and cook for 6-8 hours until meat is fall-apart tender (internal 95°C).

Remove from oven, transfer meat to board. Shred using two forks, discarding excess fat.

Mix shredded pork with BBQ sauce and apple cider vinegar to taste.

Return to oven uncovered for 30 minutes to caramelize edges. Serve in slider buns with coleslaw.
